Black forest cake
Black forest cake is a delicious dessert of German origin. It is made up of layers of cocoa sponge cake, soaked in cherry liqueur or maraschino syrup, alternating with layers of whipped cream and dark cherries, preferably in syrup. It is usually decorated with chocolate flakes or sponge cake crumbs and whipped cream. The result is a perfect combination of flavours, with the contrast between the sweetness of the cherries and whipped cream and the strong taste of the chocolate and liqueur.
For the cocoa sponge cake:
4 eggs
150g of sugar
100g of flour
50g of bitter cocoa powder
1 teaspoon baking powder
For the filling and covering:
Dark cherries, preferably in syrup or fresh
Cherry liqueur (optional) or maraschino syrup
500ml fresh cream for whipping
Powdered sugar to taste
Dark chocolate to decorate
